Whatever you decide to call it, you are going to love this sumptuous recipe! It pairs juicy, perfectly-seasoned roasted veggies with flavorful chunks of halloumi cheese. Add your favorite toppings (like my quick guacamole) for the perfect finishing touch.

This recipe uses healthy, easy to find ingredients. Here’s what you’ll need:

  • Halloumi – Yummy halloumi cheese adds a fun (and super tasty) Mediterranean twist to this classic Tex Mex recipe!
  • veggies – This recipe uses a combo of portobello mushrooms, bell peppers, and onions, plus a poblano pepper. I love poblanos, because they’re very mild, but they have tons of flavor.
  • Seasoning – You’ll use a combo of soy sauce, cumin, chili powder, and garlic powder to season the veggies. While soy sauce isn’t typically used in Tex Mex cooking, I love it for seasoning fajitas. It adds a delicious savory flavor you wouldn’t get otherwise. Kikkoman is my fave!
  • tortillas – Feel free to use either flour tortillas or corn tortillas.
  • Guacamole – For me, guac is a must for this recipe! I’ve included a simplified version of my favorite Homemade Guacamole that takes just a few minutes to make.
  • Other Toppings – In addition to the guac, I served these fajitas with lime wedges, fresh cilantro, and pickled onions. You can use whatever toppings you’d prefer though … you’ll find lots of ideas below!

These fajitas are naturally vegetarian. If you’re serving someone who’s vegan, just tell them to skip the cheese. For a gluten free option, use corn tortillas and swap the soy sauce for tamari.

To prepare this recipe, you’ll need a large bowl for mixing the veggies, a couple sheet pans (these nonstick pans are my fave), and a large frying pan for cooking the halloumi.

How to Make Halloumi Fajitas

This mouthwatering recipe couldn’t be easier to make! You’ll find a detailed recipe card below, but here’s an overview of the steps:

  1. Prep the veggies. Start by slicing your veggies. Then, whisk together the oil, soy sauce, and spices. Drizzle over the veggies, then mix everything together.
  2. Roast the veggies. Spread the seasoned vegetables over two sheet pans in a single layer. Bake for 15 minutes, then flip. Continue roasting for another 10 to 15 minutes, or until the veggies are tender and browned. Once they’re done cooking, season them to taste with additional salt, if necessary.
  3. Prep the halloumi. While the veggies are roasting, make the quick guacamole, then prep the cheese. Cut your block of halloumi in half lengthwise, then cut each half into 12 slices. You should have 24 pieces of cheese when you’re done.
  4. Cook the halloumi. When the veggies are almost done cooking, heat a little oil in your frying pan, then cook the halloumi until lightly browned on one side, then flip and cook until golden on the other side. You will probably need to do this in batches.
  5. Serve the fajitas. To serve, warm the tortillas in your microwave, then top with veggies, halloumi, and your choice of toppings.

  • Avocado Slices – If you want to save a little time, skip the guac and serve with sliced ​​avocado instead.
  • Limes – A little fresh lime juice brightens up all the other flavors. I like to serve each tortilla with its own wedge.
  • cilantro – If you’re a cilantro fan, add a sprinkle over the top right before serving.
  • salsa – Add your favorite salsa for an extra burst of flavor. Pico de Gallo would be delish, but you could also try this Black Bean and Corn Salsa (or even this Watermelon Salsa) for something different!
  • Sour Cream – Learn into those Tex Mex vibes by dolloping a little sour cream on top.
  • cheese – More cheese? Why not? These would be very tasty served with crumbled cotija or queso fresco or shredded monterey jack or pepper jack.

For Veggies:

  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • teaspoon garlic powder
  • 4 large portobello mushrooms, sliced
  • 2 large bell pepper, sliced ​​(red, yellow, orange, or green)

Prepare Veggies:

  • Preheat oven to 450 degrees.

  • Whisk together oil, soy sauce, cumin, chili powder, and garlic in a small bowl.

  • Place portobellos, peppers, and onion in a large bowl. Pour oil mixture over top, then mix well.

  • Spread veggies on baking sheets in a single layer. Roast for 15 minutes, then flip and cook for another 10 to 15 minutes, or until tender and browned.

  • Remove veggies from oven and season to taste with salt.

Prepare Guacamole:

  • While vegetables cook, cut avocados in half, remove pits, and scoop the flesh into a medium bowl.

  • Lightly mash the avocado, then stir in lime juice and garlic.

  • Season generously with salt and hot sauce to taste. Cover and set aside.

Prepare Halloumi:

  • After making guacamole, cut halloumi in half lengthwise, then cut each half into 12 pieces. (You should have 24 pieces total.)

  • Heat olive oil in a large frying pan over medium heat.

  • When oil is hot, add halloumi, then cook until lightly browned on bottom. Flip and cook until golden on other side. (You will probably need to do this in batches.)

Serving the Fajitas:

  • Wrap 4 tortillas in a paper towel and microwave until hot (about 30 seconds). Repeat process with remaining tortillas.

  • To eat, top tortillas with roasted veggies, halloumi, and your choice of toppings. Serve with a lime wedge. Enjoy!
